Hello!

I'm soooooo excited to tell you what I baked for Valentines... It was an amazing chocolate cheesecake! And PEOPLE YOU ALL HAVE TO TRY THIS! Seriously: AMAZING
Its really easy to do! Let's start with the ingredients:

Ingredients for a 20cm mold

For the base:


  • 115g of crushed Oreos (without the white cream inside)
  • 60g of butter
For the cake:
  • 260g of dark chocolate cut up in pieces
  • 500g of cream cheese (no light) at room temperature
  • 150g of white sugar
  • 2 eggs at room temperature
  • A spoon and a half of vanilla extract
  • 175g of whipping cream
For the ganache:

  • 175g of dark chocolate
  • 220ml of whipping cream
  • A spoon and a half of butter

Preheat the oven at 180 degrees. Baste your mold.

Melt the butter and mix it with the crushed Oreos. Cover your mold base with this mixture. Put it in the oven for 8 minutes so the base will set up properly.  Remove the mould from the oven and let it settle. 

For the dough: place the chocolate in pieces in a bowl. Heat the whipping cream and just when it starts boiling take it and pour it in the bowl with the chocolate. Let it settle for a minute and 

afterwards go ahead and mix it with a spoon, make sure you get a nice shiny ganache without
 crumbs.


In the mixer bowl, mix the cream cheese with the sugar always at low speed, add the eggs, one by one and the vanilla. Once everything is mixed properly incorporate your ganache and keep mixing.

Pour the dough into the mould , smooth it and place it in the oven at 180 degrees for 15 minutes and after that turn your oven to 120 degrees and keep baking for another 60 or 70 minutes.

Once your cheesecake is baked let it cool down completely before putting it in the fridge (still in the 
mould) and then leave it in the fridge for at least 2 hours.




Before serving, let's prepare the ganache for the top decoration.

We place the chocolate in pieces in a bowl. Heat the whipping cream up until it starts boiling and then pour it in the bowl with the chocolate. Wait 1 minute and then mix it with a spoon until you get a shiny and smooth ganache. Add the butter and mix.

Remove the cheesecake from the mould and spread the ganache on the top with a spatula or spoon.




Please DO IT! It's soooooo worth it!
